Sorry, posted it in another thread - but meant to post it here. Just an FYI - The Observer's notes in this episode are different than the ones posted in the screencap here.
The guy has no taste buds except for strong tastes in large amounts..jalapeno peppers and pepper. He doesn't have a high score in the emotional range either.
The observer ate a ton of peppers on his sandwich and in episode 102 there are is a neon sign depicting 2 peppers on it (screen cap is a few posts back.)
Regarding the Observer, has it been discussed that, in Fringe's opening credits, as the words "Dark Matter" fade away, the phrase "Observers are here" appears directly underneath it for one frame? I don't have a screen shot of it, but I'm sure someone can come up with it.
The lower left of each of the binocular images has three green dots followed by the red dot again. The pattern also appears on the "bad guy's" hat. Anyone else see it?
I don't know Japanese, but the Observer's notes (after mirroring and turning it 180°) looks like it. At least some symbols do. And it would make the comment of the waitress a clue.
I think the dots have something to do with MD's site somehow...the medical page has a bouncing red ball or dot waiting to be activated. Can someone enlarge the images of the binoculars?..Could be an easter egg. Also MD is now sending e-mails from it's site.
Nobody has mentioned the time on the pocket watch! 3:14! or pi, 3.14, which has shown up a couple other times in the series (i.e. the combination to Walter's lock where car is hidden, the symbol seen in the seahorse glyph).
I'm not sure if anyone else has noticed this here but if you watch the ghost network episode you can see the observer standing on the subway when Olivia is running down the isle.
lostgeek is right, all the text from the binoculars in the screenshot he took looks basically like some linux shell script. The definition of the enviroment variables "TMP=/VAR/RUN/_FILES[...]" and "LOG=/VAR/LOG" pretty much give that out.
In my opinion it's just randomly there. They needed some text to make the binoculars look futuristic and they took something geek-looking and threw it in the mix without any real intention. Of course, considering the history of "Lost", the mere fact that this has been pointed out in a website means that it will automatically be converted into a "clue" or something similar for the overall story of the show (at least, the part of it regarding the observers) no matter if it was a clue or not to start with. That's how J.J. Abrams made his previous show, after all.
I just hope the "clues" and stuff people look for in the show constantly don't end up ruining the overall story by leading the viewer on a wild goose chase season after season to end up rewriting the, on the other hand, brilliant story that Fringe is so far. Seems like this time J.J. Abrams is planning ahead of time instead of just writting random scripts for the next 4 episodes, it'd be a shame to destroy a proper scripting work.
Y'know, it seems weird to me that the Observer would write notes in that weird script of his when the binoculars clearly depict English words (easiest to see in upper left hand corner). So, it begs the question, if the Observer knows English, why does he use the weird lettering? Is he afraid someone will steal it? And if so, who?
Here you will find screen captures of each episode of Fringe which are of special interest and/or that contain easter eggs. Easter eggs are hidden content intentionally inserted by the creators of Fringe. If you would like to request a screencap, you can do so by leaving a comment here.

Notice the Green and Red Dots in the lower left corner of the binocular images...
Josh, that was the first thing I noticed, too. Veeeeeeeery interesting.
the same dot pattern that was on the hat of the guy trying to steal the beacon.

Unfortunately, it isn't Japanese, elsewise I could translate it. But you're right, some signs are looking like kana.
And... is it just me, or the observer looks like "Dave" from LOST?
I guess the observer is using linux on his binoculars. I can clearly read '/usr/lib' :D

the three green and one red dots also appear in Olivia's dream sequence on the kayak.
Thanks lostgeek for the link.

in the last picture what is he looking out it shows it locating something but i don't see anything anyone know?

The observer gets off the elevator in Power Hungry before the others enter.
Episode 7. Just spotted the observer turning away from the new arrivals getting off the plane in Germany.
green green green red is a recurring series of colors in Fringe. Most noticeably in the equation episode.

I think nick has it with the green green green red pattern. It is a recurring pattern from a earlier episode.
